Mini Birthday Bundt Cakes

My office has a tradition where you bring in your own cakes for your birthday, I don't really know why as it seems a bit odd to make the birthday star put in the effort but that's the way it is. Seeing as I have been baking so much this year I decided to homemake my cakes and bring them in. I've been a bit stuffed with frosting so I thought I'd make some mini bundt cakes. I improvised this recipe by cutting it in half and using a mini Bundt cake pan like this one. I dusted them with icing sugar and they were fantastic, very moist and light. They were a welcome break from my usually very rich cupcakes! 


With the excess batter I filled a ramakin and made this adorable mini cake which was just enough for me and Rob to celebrate with on my Birthday!
